i'm an idiot. best way to hardboil eggs?
okay, i know the best eggs to hardboil are eggs that are "old" but i'm not usually that planful when i want to make hardboiled eggs.
so, every time i make hardboiled eggs, when i peel them, the shell sticks like crazy and a quarter of the egg ends up with the shell/waste which just irritates me.
what am i doing wrong? the yolks are cooked perfect and the consistency is great but the sticky shells make me bonkers.
please help me. i feel like some moron who can't even boil water.

It is the eggs. Old eggs peel better than new eggs.
FWIW, this is my technique: boil water to a soft boil. Put eggs in and turn off the water. Let sit for 13-14 minutes, and then dunk in COLD water to stop the process. I generally don't have trouble peeling, but I usually don't boil brand new eggs, either.
This is how I cook mine too, never have a problem peeling
I usually just lurk but we own chickens so here's the test to know if you can hard boil an egg
Place the egg in a bowl of water
if the egg floats it's bad toss it away
If the egg stays horizontal it's not ready to hard boil (and you'll experience the same thing you were talking about the shell sticking and it being hard to peel)
If the egg turns so it's standing on end it's ready to hard boil as the egg is "old meaning 3-4 weeks since laid" and the egg white has started to pull away from the shell. Hence the pocket of air you get on the base end of a hardboiled egg.

Here's what I do, and I never have "sticking" problems, regardless of the age of the eggs:
Fill pot with COLD water that will be filled at least one inch past the top of the egg. Egg can go in the cold water.
Bring water to boil.
Once boiling, leave it boiling for 10-12 minutes.
Drain water, and either place egg in COLD water, or just run COLD water over the egg for about a minute to stop the cooking.
Let it cool until you can handle it, and peel away!
EAT.

This is the same cooking method I use. I also let the eggs sit in the cold bath for a lot longer (no less than 1/2 hour). I've heard that the cold bath is what causes the egg to shrink and pull away from the shell, and that a tablespoon of baking soda in the cold bath will also help.
I've heard this too, so I always let the eggs cool in cold water for awhile before removing the shell.
This doesn't help the shell sticking issue, but I also put a tablespoon of vinegar in the water when I boil the eggs. It keep eggs from cracking while boiling. I don't know exactly why this works, but I saw Martha Stewart mention it on the Today Show years ago so I started using vinegar when boiling eggs and I've never had one crack since then.

This is what I do too, and I also have sticking problems. I didn't know anything about old eggs boiling/peeling better than new eggs though.

I forgot a step!!
Okay, so in order to make it peel easier, I gently roll the egg in a paper towel first, so that it cracks all over (without smushing it), and THEN start peeling. There's a membrane between the egg and the shell, and if you can tear that, the shell will come off MUCH easier.
