I'm working, eating a cheeseburger, then taking a nap. Yay me.
Nothing special here.
making pork tacos using the same method as the salsa chicken, only with a pork loin.
Also making guac (I love guac)
and having a very large margarita!
We're celebrating siete de mayo this year.
Last week I mentioned to friends that I have an an aweseom fajita recipe and they were pumped because they've never had awesome homemade fajitas. They're coming over on Saturday night so I'll be making those and maybe Nooners margarita cupcakes.

Same here. I could totally go for come guac, salsa and chips right now. Nom.
I'm really picky about my guac though. If it's not a certain color green, I can't eat it. Odd but true.
It's the only sunny day this week.
It's Cinco de Mayo.
I work downtown in an emergency department that accumulates a lot of intoxicated people.
It's finals/graduation week at the Catholic university down the street from where I work.
Hence, I'm going to be in hel! today. But I'm making taco salad and mexican rice tomorrow. Maybe I'll make margaritas too for DH and I.
Congrats to both my TTC buddies, Amberley18 and sb2006 on their beautiful babies!
I love any excuse for mexican food! But we're not going out for it, all the places are crazy this day.
We're having vegetarian tacos (soy crumbles, they're actually pretty good) with black beans. I hope there's margaritas involved, but at this point, I'm not sure. I had a couple on tuesday night so those might have to count.
We went to Acapulcos for lunch, and now we're sipping margaritas. Yay!
Also celebrating Seis de Mayo with friends tomorrow night at Margaritas. Another yay!
