Cinco de Mayo

Anyone have plans? if so, please have a margarita for me! One of my faves, sigh. Totally unplanned, but we are having leftover Mexican lasagna for dinner, lol

Re: Cinco de Mayo

  • We are making tacos/burritos, queso dip, fake margaritas for me (real for H).

    I cannot wait!

  • JJ is a fan of Mexican, but not the kind that I make at home, unfortunately. So he'll probably have chicken fingers and fries, and I'll probably pick up some tacos on the way home [don't want to make anything that will create leftovers since we'll be gone all weekend]. I do have some beers sitting in my fridge I plan on enjoying tonight with those afore-mentioned tacos.

  • I may hit up Qdoba for lunch and bring home some queso dip for Greg tonight.

Qdubb...I have one right across the street from my office. That may now be my lunch. :P

  • Well, being that I work at a school with over 80% hispanic kids - I love this holiday!  I get authentic Mexican food, home cooked by the parents :)  Yay!  They have the most amazing tamales ever - in the world, lol!

Tonight - I didn't think about it when I planned it but I'm using my wonton wrappers to make these little taco things.  I basically made it up but we'll see how it works out:)

    Happy Birthday, Rodgers!

I/we are boring and are not doing anything to celebrate Cinco de Mayo.  Actually, I completely forgot it was today - the holiday planning meeting that is going on behind me probably has something to do with it.

  • Yum, Qdoba! Wish we had one if those or a Chipotle closer than an hour away :( happy birthday Rodgers! Jenny, what holiday are they planning for?
  • And Ash, let us know how the tiny tacos turn out!

I work for a shopping center (O.K., it's a mall but our leasing guy insists we call it a shopping center.) and we are already a couple months into the planning for Christmas.  We just have to be politically correct and call the time between Thanksgiving and Christmas as "The Holiday", especiallythe owners are Jewish.  The meeting I was listening to (the conference room is right outside my cubicle) was for hashing out the budgets for the various different activities we will have going on during that time.

I would like to add that the mall/shopping center Jenny works for is sort of known for their holiday stuff.  They have an amazing train (the little toy ones) display at Christmas.
