Things To Do In/Around Charlottesville
I think DH and I are going there over Memorial Day weekend. We will definately do Monticello. But I would love other suggestions, especially restaurants and hotels (no B&Bs). Also, we would like to do a winery or two. Do they have tour buses that will take you.

We love Palladio, the restaurant attached to the Barboursville Winery. It's a 5 course dinner with wine pairings. Very romantic. And I think if you have a reservation, they let you come early for a tasting after the regular tasting room has closed. (At least they did the last time we went.) Need a reservation in advance.
A former co-worker who went to UVA suggested the Boar's Head Inn. http://www.boarsheadinn.com/ We ended up staying at a cheap hotel though, so I can't vouch for it.
Definitely take a stroll around the UVA campus, the rotunda and the lawn. They are beautiful (ok I may be a little biased b/c I went to school there). Charlottesville has a pretty neat little downtown area and they do concerts in the summer (at least they used to) so that might be a good night time activity.
Book your Monticello tickets online in advance, they do sell out for the prime times.
I know that you can get someone to drive you around the wineries. But I don't know about a group tour. You will probably need to book it before your weekend. Most people just drive themselves around to the wineries.
DH did our 1st anniversary weekend at B&B near Afton. We did Monticello, Charlottesville, lots of wineries (Whitehall, Hilltop Berry, Veritas, and Afton Mountain), and took the really long way back and drove down the Blue Ridge Parkway). It was amazing!

You already got some excellent suggestions, so I will try not to repeat. For an inexpensive lunch on the downtown Mall there is a small dumpling shop that has excellent dumplings and hot and sour soup. Lunch for the two of you will be under $10. The downtown Mall is fun to stroll, shop, and they often have concerts in the summer. If you are on campus and want to grab lunch, try Boylan Heights located on the Corner. They only serve organic meats and veggies. It's a bar by the way so nothing in the way of ambiance, but it's hard to beat price wise for the quality of food. For breakfast I really like Bodo's Bagels. They're yummy. Not perfect NJ bagels like I grew up eating, but much more tasty than the usual bagel fare down here.
If you are going to Monticello and want to grab a glass of wine in a beautiful location, Carter Mountain Orchard is really lovely. They have a country store, homemade ice cream and other treats and local wine by the glass. The mountain overlooks Charlottesville and has a beautiful view.
Another Historic House with beautiful grounds is James Monroe's Ashlawn Highlands. It's really lovely.
I don't think anyone has mentioned Barboursville winery yet. It's also yummy. On Memorial Day Sunday, Kings Family Vineyards has the first polo match of the season. This is a really fun way to spend an afternoon, drinking delicious wine, eating yummy snacks and watching polo.
