What's for Dinner this coming week ladies?

What is your all time favorite home cooked meal- Please share recipe if you are willing... (I need inspiration)

Have you ever had a week where you just cook out of your fridge/freezer/pantry ONLY!

  • So we are trying to eat up all the food we have before the move!  So it will be interesting meals...

    Saturday and Sunday- Cockpot hotdog Chilli

    Monday and Tuesday- Sausage cooked in spaghetti sauce with greenbeans 

    Wednesday and Thursday- BBQ chicken with mashed potatoes

    Friday and Saturday- Bean and Cheese Tacos

    * DH won't be thrilled to eat the same meal 2 days in a row all week, but he will survive.  

     

    My all time favorite home cooked meal is my Aunt Mary's Mac and Cheese recipe that I have altered to make GF

    1 lb GF pasta 

    1 cup gouda cheese shredded

    1 cup cheddar cheese shredded 

    1/4 cup milk

    8 oz sour cream

    salt

    Directions 

    Preheat oven to 375 

    Cook the pasta, Drain

    While still hot mix in cheese, sour cream, milk and salt

    Spray the casserole dish with PAM

    Pour the mixed pasta in and bake at 375 for an hour covered

    Remove cover and bake for 15-20 minutes until top is golden and crunchy.

     

    It is DELICIOUS!  You can use regular noodles if not GF.

     

     

     

  • DH is on afternoon shift (2pm to 10pm) this week, so we split the shopping money and decided to go it alone.

    So this week, I am having

    Mon - Vegetarian schnitzel and veges

    Tues - Mircrowave vege lasagna ( I have sewing class so have to eat at work)

    Weds - Tofu Strifry

    Thurs - Anther Vege schnitzel (these two per pack)and veges

    Fri - Soup and Toast

    It might all change yet...but I did just make a huge fruit cake to eat all week for morning tea at work.  Low GI, and yummy.

  • Tonight- seared scallops with baby greens and grilled cheese

    Tuesday- baked chicken with gnocchi (I've been wanting to make this for a long time)

    Wednesday- Meatball subs

    Thursday- Spinach and chicken lasagna roll ups

    Friday- Broccoli beef with rice

    Saturday Turkey gyos in pita with tazsaki sauce and tomatoe and cucumber salad

    Sunday- sausage, mushroom and spinach pizza, hopefully grilled on our new BBQ!

    Our weekend menu may change since we should be getting our new BBQ this weekend. If thats the case I'll be playing with my new kichen toy!

    As far as do you ever eat just out of what you have at home. I go "big shopping" once every two weeks. On the off week I try really hard not to have to go shopping for anything besides milk. My parents have chickens so I get my eggs from them and if I work on the farm I also get my season veges for payment. This week I should be able to get my without going shopping.

  • I'm trying out a meal plan from Women's Health magazine this week.

    Roast Chicken with cramy polenta & mushroom ragout

    Chicken Pnazanella Salad

    Chicken Lettuce Cups

    Curried Chicken with brown rice (rice subbed in place of couscous)

    Chicken & Goat Cheese Quesadillas

    I roasted the chicken last night and tore it apart for the rest of the week's recipes. I'm eating the polenta and mushrooms right now and it is delicious! The ragout would make a really good pasta sauce.
