I had a tasty taco salad with lean ground beef, 2% cheddar, salsa, and sour cream. I put some baked lays on it to simulate the shell bowl.
I feel so proud of myself b/c I haven't cooked in week (yes, weeks), and finally mustered the energy to brown the beef before work this morning. In fact, this also qualifies as a IWLAMP.
Re: WFL?
Browning beef before work definitely deserves a medal. Heck, putting meat in a crockpot before work deserves a medal in my book!!
My lunch is boring, yet typical:
turkey on Wegmans pretzel roll
cheezits
Easter candy (oh yes, I have enough to last until Halloween)
apple
carrots
yogurt
I have a new rule: no dessert until I've eaten my carrots. It's been rough. The carrots usually hang out in the work fridge all week.

My lunch today is a tropical smoothie sandwich (turkey on 9 grain bread) along with a tropi-coloda smoothie.
I forgot my lunch today which would have been similar to a taco salad.
Tortilla soup and a Fiber One brownie (which is pretty bad btw yet still addresses my chocolate need).
I had my new favorite salad:
Fresh herb mix
rotisserie chicken(3oz)
dried cranberries (20g)
Humboldt fog (.5 oz)
with a little olive oil and vinegar - healthy and filling.
Then I had some of the Quadratini from Trader Joe's - those things are way too addictive.
