Side dishes

Do you guys have any side dishes that are easy during the week? I always figure out the main meal and then i'm like crap i need a side and usually reach for those pasta sides, rice, box mac n cheese.

 Problem is- im not really a salad/veggie eater..............Hubby is though so i make him a veggie at least.

    Cous-cous.  It takes less than ten minutes and I just throw in some butter, a little parmesan cheese, and whatever veggies I have on hand (cooked separately).

  • I am a veggie person....but theres always mashed, baked potatoes, roasted potatoes, friends, all of the previous with sweet potatoes, rice, pasta, sauteed spinach, roasted veggies....mmm.

    Our usuals are baked potatos, fries, tater tots, rice, frozen broccoli, and salad.  For bbqs we sometimes get macaroni salad/potato salad instead.

  • my dh is obsessed with the birds eye steamers.. they have mixed vegetables, pasta, whole grain rice... they take about 4 minutes to make in the microwave. :)

  • oooooh and rice and beans.  i use that as a side or main dish.
  • We do a lot of roasted veggies.I like the flavor much better. Also grilled.

    One of my fav's is butterrnut squash. You can buy it pre peeled and cubed so just throw it on a pan with olive oil and a little salt and pepper for about an hr. pull it out and mash it with a little butter. kind of like potatoes. we also do zucchini, squash, mushrooms, onions. This way. 

     

    In the summer we just cut up tomatoes and cucumbers and have those.

    we do all of the above.... live for those birds eye steamers.... roasted veggies,  they have steamer bags of potatoes for a quick mash.. i do a lot of those quick rice packets...

    I craved those my entire pregnancy. I still buy them like crazy every time I see a 10 for $10 sale.

  • we have a starch and veggie every night with dinner.

    last night was cheese ravioli, so i served a plate of cut up red and orange peppers and cucumbers with some dip on the side.

    when we had fish earlier this week, i made couscous (boxed mix) and a bag of steamfresh string beans

    i use a lot of the steamfresh or allen's steam in bag frozen veggies. it's just easier. when we have green beans/string beans, i often sprinkle some sliced almonds over them too.

    i love grilled veggies or roasted inside

    i nuke sweet or white potatoes often too. roast potatoes are yummy, but take too much time during the week for me.
