Ok I need new lunch ideas for work. First, they have to be meat free (I work at a jewish school and this is our "kosher") I also don't eat fish. I have been eating peanut crackers but that is getting old and I can't eat them anymore.
Thanks ladies!
Re: I need lunch ideas
Anything with beans! I know there are some pretty good salads and other meal options.
Can they have meat if it's Kosher? I know that it's often easier to just be meat-free, but I wasn't sure if they would allow you to eat something with Kosher meat. If so, Trader Joe's has a lot of kosher meat for really good prices, if there's one near you.
If not, what about some vegetarian soups? I like soup because it's fast and easy. Amy's has a few varieties of bean, lentil, and split pea soups that I like a lot. There are also a few at TJ's I like - butternut squash and carrot ginger are both yummy.
Nope no kosher meat because we couldn't "prove" that it is Kosher.
eyeroll.
There are a bunch of frozen vegetarian meals at my grocery store - most of them by Amy's. I am a big fan. I don't know if they'll let you get away with something like a bean burrito, though, seeing as how you could sneak some meat in there...
LOL. As for the frozen meals - they can get pretty pricey, I usually wait for a sale and stock up. I've seen them at Sam's/costco/BJ's type places, so that might be a place to look.
Edit: the Trader Joe's soups are cheap, there are like 3-4 bowls in a $2.99 carton. I have also been known to make a batch of homemade soup, portion it, and freeze it for lunches. That's very cost-effective! I keep a can of soup in my desk for emergencies.
I've been eating cheese sandwiches lately, which were basically all I wanted to eat for about 2 weeks. I also really like the Amy's bean burritos - I think I got them at Costco, and they were about $1 each. Super yummy, though.
I also like bringing veggies and ranch dip (made with low-fat sour cream and Hidden Valley ranch powder), and crackers or pretzels with the Laughing Cow light cheese triangles (also from Costco - super cheap there).
Yummy
We don't have Trader Joe's here
I have heard they are great.
In the summer I buy produce weekly at Produce Junction and eat a salad almost every day. I also make batches of soup and take that. Veggie would be perfect for this.
Black beans and rice; black bean side salad...or make mediterranean salad with orzo/pasta salad/macaroni salad/potato salad and take that for the week along with some fruit and raw veggies.
we dont have TJ's here either, but i just drove a couple of hours this weekend to TJs to stock up
some ideas--make ahead a salad the night before with garbanzo or white beans on it. or black beans and salsa.
buy an annie's frozen pizza. cook it at night and cut it into pieces, it lasts me two meals.
annie's burritos.
soups!
veggie burgers--but these are only good if you have a toaster oven at your school. i have a huge irrational fear of veggie burgers in the microwave. they end up slimy.
