Casserole?

Anyone have a good casserole recipe that doesn't involve chicken?

Re: Casserole?

  • I warned you that I could eat Mexican every single day, so this came to mind first.

And because we still like to eat like kids sometimes, this "pizza" casserole.

I do put the 3 cups in it - then I ususally just eye-ball covering the top.  Mike lovessss cheese though so I may end up using 2 add'l cups and don't realize it.

  • Tuna casserole (cream of mushroom soup, tuna, noodles, pees or brocoli, shredded cheddar and crushed chips on top)

Ham 'n Potato (diced potatoes, cubed ham, cream of mushroom/chicken/cheese soup) then I add broccoli after it's cooked.

Should I have mentioned that I'm the pickiest eater in the world when it comes to meat and also don't eat seafood or any sort of pork?  Haha!

Minus those ingredients, though, these sound really good!

Yeah, I wish I did.  Chris and I have been grilling dinner almost every night since the weather has been tolerable, and we are basically choosing between steak and burgers.  I just told him last night that I bet he wished I liked pork so we could do pork chops or something.  He agreed!
