kohlrabi recipes?

I typically make kohlrabi into some sort of soup or Indian curry, but seeing as I've got lots & lots ready to harvest in the garden, I'm thinking I'll need a few other recipe ideas.

Anyone have favorites?  For the bulb and/or the leaves?

Re: kohlrabi recipes?

  • Isn't that like a turnip?  What about a mash of some sort (instead of mashed potatoes, you can do mashed kohlrabi)... or even just chopped up and roasted with oil, s&p, red pepper flakes...
  • I think it tastes more like a cauliflower, but mashing is a good idea.  For whatever reason, I don't like it roasted.

Google has also lead me to some slaw recipes that I may try out...(but mashing is oh-so-much easier!)

  • I would think slaws would be good. Perhaps with a tart apple.  I also think salads with it would be lovely with thinly shaved fennel.  Have you ever made that broccoli stem salad with ramen noodles and sunflower seeds and raisins?  To me, kohlrabi tastes a little like broccoli stems and I think it would be a perfect substitute.  I've made this puree before and it was really good: http://www.farmgirlfare.com/2007/11/recipe-what-to-do-with-kohlrabi-puree.html.  I would toss the leaves in soup or quickly sauteed with oil and chili flakes (my preferred method of eating greens).  You could substitute them for bok choy in a stir fry.
  • We've always just sliced it and eaten it raw - sometimes straight from the garden. Dad would peel them and my brother and I would rinse them with the garden hose and eat them.  They also add a nice crunch to a lettuce salad.
