Easy Dinner Recipes

We are in a dinner-eating rut. I know we have talked about this before but i need some new ideas and inspiration. HOWEVER, i am not a great cook so the recipes can't be too difficult. Best recipe posted gets a big <virtual> hug from me.

  • My favorite go to right now is pulled pork bbq sandwiches in the crockpot.  I just throw in a pork loin and cook on low for 8 hours.  I mix up water, cider vinegar, cumin, and worstershire sauce (I'll get the exact measurements if you want when I get home).  I pour that over the pork loin.  After 8 hours or when done, I pull the pork out and shred it - pour out the extra sauce.  Then I put the pork back in with BBQ sauce of choice and cook on low for 30 minutes to warm it all back up.

    My other go to is ravioli casserole (not at all healthy).  I've posted the recipe before but can post it again.

    Also, we do a lot of grilling this time of year.  Veggies, meat just whatever.  I love shish ka bob's !

  • I just prepared this for tonight, but I'm hoping it's good! 1 1/2 lb chicken, cut in cubes and put in bottom of 13 x 9 dish, lightly sprayed with Pam. Season chicken. Sprinke with 1 cup shredded mozzarella cheese. Combine can of diced tomatoes with basil and onion, packet of herb-flavored stuffing mix and 1/2 cup of water in bowl. Pour/spread over chicken. I sprinkled more cheese on top :) bake at 400 for 20-25 minutes.

    This sounds really good.  My tummy is rumbling.  Let me know how it turns out.  I sure it'll be delish! Stick out tongue

  • Have you tried any of those new Philly cream cheese mix-ins? They have recipes on the back, and the two we've tried were really good. Plus, huge bonus for being easy and not requiring any thinking. Stick out tongue

    Oh, I also like this blog: A Year of Slow Cooking. She dedicated herself to cooking in the crock pot for a year. I'm pretty sure that was a while ago, but she updates with new recipes a lot now to. If you have time, you can always peruse though it for some good recipes!

  • I made a really easy recipe tonight of just braised pork chops and rainbow chard and served it with brown rice.  It was super easy and quick, and the chops and chard were cooked in the same pot with a little garlic, onions sweet curry powder and ground fennel seeds.
  • The brushetta chicken bake was a success in my opinion. Easy and tasty :)
