I am going to try and do a meal a week that is meatless, can you guys give me some ideas?
Normally anything that doesn't have m,eat in it my husband considers a side dish, not an entree. So I am looking for some filling dishes. Thanks!

We do tacos sometimes with the Morningstar crumbles that DH swears are better than the "real thing". I just cook it up with some chopped onions and taco spice mix. The rest of it works just like the usual kind.
I'm also a total devotee of this chili recipe with cornbread - except I cut the spice drastically and more or less triple the veggies.

I haven't posted to this blog in a few years but almost all the recipes are meatless, though a fair amount have seafood in them. We went pescatarian for lent one year and I documented what I cooked.
We have homemade pizza a lot for our meatless meals - with whole wheat crust its pretty filling.
You could have spaghetti squash with red sauce - a nice, lighter alternative to pasta.
A nice salad with hardboiled eggs and cheese for protein
There are a thousand great tofu recipes out there. H and I made a bargain where I got to try cooking it 5 times before he could say he didnt like it. Verdict? He thinks its okay, and we have it occasionally now.

I make these bean patties every few weeks. They are quite tasty. I serve them topped with guacamole and the green tabasco sauce.

I'm glad you like it! It's been so long since I've really looked at it but I remember really liking most of the recipes and we never felt like any of the meals weren't filling. I think I need to revisit it.
Here's what we had for dinner this week. We eat pescatarian
Sunday: fish, chips & asparagus
Monday: red beans and rice (the beans had canned tomatoes, peppers, onions, garlic, bay leaves, oregano & a TBSP of peanut butter).
Tuesday: - Spinach Frittata
Wednesday: Tiki Masala and curried chick peas with basmati rice
Today: Pierogies with broccoli or green beans
Friday: Pizza
I insist on a green vegetable with pasta or other fast-food type meals.
We've also had peppers stuffed with couscous & tomato sauce. Couscous in pitas with an olive, spinach salad (olives, spinach, garlic, feta). Pasta with beans.You could do loaded baked potatoes (cheese, broccoli, salsa,etc.) though that doesn't go over well with DH.
We eat these calzones regularly. They're a nice break from pizza.
We also do tuna casserole and add in peas and mushrooms frequently.
5 cats. 1 baby.
DH and I can attest that that chili is incredible, and we're not a meat-substitute household. It's flavorful, filling, and I feel good eating something so loaded with veggies.
