Hi ladies,
This is a totally random question that I wonder if anyone can help me with: Do you know somewhere nearby (I live in Haddonfield) that sells leaf lard? I want to try making a pie crust with it, but so far I only know of a place out near Kutztown, PA that sells it. (Fyi, I'm also posting on the Philly and What's Cooking boards.)
Thanks in advance for any tips!
Re: Where to buy leaf lard?
What is leaf lard? Yes, I know I can google it but I'm trying to create traffic on this board
I use Crisco in my pie crust.
I am happy to answer, though I'm afraid when I tell you, you might regret asking--lol.
Leaf lard is sort of a high-end type of lard that's rendered from the fat around a pig's kidneys. I know, I know--that is way, WAY gross and yes, I may have lost my mind a little in thinking that I want to try making a pie crust with it. But I've been experimenting with different types of pie crusts lately, and many bakers (and tasters!) rave about it yielding a very flaky, tender, and flavorful crust, so I figure why not give it a try. Apparently (this is all new to me) there are different types of lard, and the kind I've found in the grocery story has some yucky additives and hasn't gotten stellar reviews as far as baking results go. Believe it or not, lard actually has a lot less saturated fat than butter, and more monounsaturated fat.
So there you have it...I apologize if it's TMI! Someone on the Philly board suggested checking one of the butchers at Reading Terminal Market, so I may give that a try
Definitely not gross, my husband is a chef so some of the things they do with French dishes are way worse than that! It's often the yucky stuff that tastes the best. I am going to ask him if he knows of any place locally and let you know what I find out!
