Sides that go with Fajitas?
Hi. I'm having a small (10 people) mexican themed party and was planning on serving fajitas. Anyone have good sides that go with fajitas and recipes they can recommend?

I don't cook Mexican food, so I can't recommend a specific recipe, but a few sides come to mind:
refried or black beans with rice
chips with salsa and/or guacamole
stuffed chillies
grilled bell peppers
Ditto what temurlang recommended
For my Mexican cooking lessong with DH's grandma, we made taquitos for an appetizer.
Heat some oil in a small cast iron frying pan. While that's waring up, shred some cooked chicken breast or skirt steak (I marinate mine in this green sauce I get at the store ... the brand is Goya ... I can't think of what it's called) and put that in a corn tortilla. Wrap the tortilla up. Once the oil is sufficiently heated, hold the taquito with the opening side down so it creates a seal. Let it sit on one side for a couple minutes (2-3), then flip over.
Serve with guacamole, sour cream and salsa.

Just echoing the previous ideas of rice & beans... not sure how much you're planning on home-making, but I'm all about simple. As in, almost ready made. There are several yummy boxes rices out there (some recommend a heaping spoonful of salsa stirred in for a little more flavor), and also if you do canned refried beans, add a tablespoon of water and some cayenne pepper, and they're infinitely better.
Another yummy side/appetizer is seven layer dip... I don't have a recipe but I'm sure you can google it - it's delish
Refried black beans are a healthy hit at our family events. 7 layer dip is really popular. If you're interested in upping the anty of your fajitas, you could find the recipe online for the cilantro lime rice they make at chipotle and serve it as well.
A10 Siggy Challenge: Our Next Vacation Destination: Paris!
If you want something fun and different, I can recommend "Armadillo Eggs".. now before you go, "ewww gross," let me tell you how to make them first.
Ingredients:
- Whole Jalapenos (Usually found in a can, but feel free to use what you'd like)
- Mexican Cheese Blend (One bag should do)
- Breakfast Sausage (I prefer maple or hot)
- Shake and Bake (any flavor, but I stick to original)
Directions:
1. Take each jalapeno and make a small slit down one side to empty out the juices and/or seeds.
2. Fill the empty jalapeno with shredded cheese. (Then close the jalapeno again)
3. Wrap the jalapeno completely in sausage. (Leave out the stem if possible... that's the "tail")
4. Dip the covered jalapeno in shake and bake mix.
5. Bake on a cookie sheet or slab in the oven on 350 degrees for about 25-30 minutes.
6. Enjoy! (They are always a hit when we make them... I usually make some stuffed cheese balls without jalapenos for the guests that aren't a fan of hot foods)
