I know you won't see this till the morning, but I know I'll forget the recipe so here it is:
2.5lbs of russet potatos
2 ribs of celery, finey chopped
1/2 small-medium onion, finey chopped
3 tbsp pickle relish
1/3 c. mayo or miracle whip (I use reduced fat miracle whip)
1/3 c. mustard
salt/pepper to taste
2 eggs boiled & chopped
Peel & boil potatos (I cut them in half) for 15-20 mins until almost tender (not too tender, they will turn to mush). Drain & cool in fridge for at least an hour or two. Cut up, add all other ingredients & mix together. Refridgerate overnight & serve
I really like it. You can make it w/o the eggs if you want it to be a little bit more healthy but we like eggs in it. Also, the mayo & mustard can be adjusted to your liking. It's still not "healthy" food, but making it yourself if waaaaaaaay more healthy then the store brought stuff.
