And insanely easy. It took me less than 30 minutes to pull the whole thing together last night. Easiest risotto I've ever made.
Just had leftovers for lunch, and it reheats so well. I can't wait to pick up more beets at the Farmer's Market on Sunday and make it again next week. And maybe the week after. YUM!

Fresh beets are soooooo much better than the canned stuff.
This looks intriguing. In general, I'm not a risotto fan. And the entire thing being bright red freaks me out just a bit. But I might still give it a try since I love beets AND goat cheese. Thanks for sharing!
