I need some recipe help. DH's brother and his girlfriend are coming to visit this weekend. Yay! She is vegetarian. Any recipe suggestions for dinner? I am thinking maybe risotto one night.
I've also got this great divided lasagna pan, so I can make three different types (Regular, Veggie, and Gluten Free). If you have good vegetarian lasagna recipes...
On Sunday everyone in our class is bringing in food for Sunday School. I am looking for some sort of breakfast casserole/fritatta recipe, preferably one without any bread. I want to be able to eat something, since others are bring in things like donuts, waffles, etc that I can't eat.

That veggie burger looks great. I think that I might try that with quinoa.
I love the lasagna pan. It's perfect for us. I can make a row of gluten free for me and regular for everyone else.
You can easily make a crustless quiche if you want to! I don't really have a recipe for it, but I usually whisk up like 4 whole eggs, and some egg whites (for bulk without fat), a little milk, and then throw in whatever fillings I want. My fave is bacon, cheese and broccoli. season with salt and pepper.
I dump all of that into a pie pan that I've sprayed with Pam, and bake it like I would a normal quiche, until it's set. You could make it in a larger pan if you wanted to. Or you can pour it into a muffin pan and make individual ones!!
Easy peasy.
