I'm hosting a graduation party for my baby brother next weekend, he's growing up! ![]()
Anywho, he wants me to have a Mexican themed spread, so far I have:
Appetizers: salsa, quac, chile con queso all served with tortilla chips. Ashlee's black bean and sweet potato wrapper thingies
Entrees: chicken enchiladas, slow cooked pork carnitas
Dessert: Graduation cake
Drinks: Skinny margaritas, Tecate beer and sodas for the kiddos.
Thoughts? Suggestions? Should I add anything else? My only requirement for a dish is I need to be able to prepare it ahead of time.

The only thing I would do though is add something for the kids to eat. I'm not sure how kid friendly chicken enchiladas and pork carnitas are.
sounds great! what about a flan for dessert to go with the cake? our families are dessert people though and it's kind of common for us to have more than one dessertm.
also what about flautas, those crunchy rolled up filled tortillas, or maybe a cold and refreshing fish ceviche?
Sounds like you're good then if the kids aren't picky!
FWIW, even the wicked picky kids in my family would probably eat chicken enchiladas. Worst case scenario, keep a few tortillas & some cheese around & make plain cheese quesadillas.
Maybe some chile rellenos?
I have recipes for Guac with Pomegranate and Mango, as well as a pineapple enchilada if you have any vegetarians.
