Bored? Give me some side dish ideas
I'm pretty stoked to make a big Mexican fiesta this weekend. Currently on the menu:
Carnitas with tortillas and various toppings, homemade guac and salsa. Plenty of cold cervesa and margaritas, key lime pie.
I love a good corn and tomato salad, but only with nice fresh produce, which isn't in season yet. I know I can get decent zucchinis to grill, but we make that all the time.
I'm thinking of trying a copycat recipe for Chipotle's rice (despite my cilantro hatred). Any other ideas?

The rice on the chipotle fan website is decent - it's not great. The corn salsa recipe from that page is good though.
We really like this mexican rice.
ETA: When I make that rice I add a diced green pepper, corn and peas. You could get wild and do a carrot too.
We make the rockin' world go 'round.
You could do a slaw with cabbage (maybe mix green & red), minced jalapenos, jicama, cilantro, cojia cheese & a lime juice vinaigrette. In my blog I have a "recipe" for choose your own adventure slaw.
I know pasta salads aren't the height of fashion right now, but I looooove this one and I'm making it this weekend (and you could just skip the cilantro). In addition to being yummy, it's pretty and colorful :-)
Cilantro and Lime Pasta Salad
Salad Ingredients:
1/2 lb. Rotelle or other Spiral Pasta
1/2 cup Green Peas (Thawed if Frozen, Raw if Fresh Peas areAvailable)
1/2 cup Red Onion; Minced
1/2 Red Bell Pepper; Seeded and Finely Chopped
1/2 cup Fresh Cilantro; Coarsely Chopped
(Substitute Fresh Parsley if Cilantro is Not Available)
1/2 cup Yellow Summer Squash; Cut into Small Cubes
Dressing Ingredients:
1/2 cup Fresh Lime Juice
4 Tbs. Fresh Cilantro Leaves; Finely Chopped
(Substitute Fresh Parsley if Cilantro is not available)
8 tsp. Olive Oil
2 tsp. Granulated Sugar
1/2 tsp. Ground Cumin
1/2 tsp. Salt
1/2 tsp. Black Pepper; Freshly Ground
Prepare pasta in a large pot of boiling water as directed onthe package until al dente. Drain and cool. Toss with a teaspoon of olive oilto keep from sticking, if desired. Combine peas, red onion, bell pepper,Cilantro and squash in a large bowl and add cooled pasta. Toss to mix.
To prepare salad dressing combine lime juice, Cilantro,olive oil, sugar, cumin, salt, and black pepper in small bowl. Whisk tothoroughly blend. Pour over pasta and chill. Serve on a bed of salad greenstopped with the pasta salad. Cover and refrigerate to store.
