    and the usually standby's of Veggie burger's and dogs

     Probably not for hot weather but it turned out good so I"m sharing.

    Hey, but there's meat in there!  Is that OK?

    If yes, I like the idea of sub sandwiches and chicken patti sandwiches (Meijer makes a bag of chicken patties).  Also, we used those chicken patties on a mixed garden green salad and paired it with some sliced almonds, grape tomatoes, chow mein noodles, and a sweet dressing to try to make that AppleBees chicken oriental salad.

  • i've decide that I'm going to start hoarding money away during the year for take out and going out to eat more during the summer. I hate coming up with meal ideas during the summer. blah!!
  • These are great ideas.  A lot of the meat ones won't work for me, but maybe someone else here will like them.

    Okay, so... here's our assignment for June: if you make and love a recipe that doesn't include a lot of indoor cooking, you must post it here.

    I think tonight we're having veggie/salad pita pockets.

  • Tonight we are doing burgers on the grill.  Depending if I am eating meat that day or not, I will have H throw a black bean burger on for me. 

    My current favorite summer meal is black bean tacos topped with cabbage and feta.  Yum!  I think we are going to have to have them tomorrow.

    Another meat free idea for you, if H is in  the grilling mood and I don't want meat, I just buy lots of veggies and have him grill them up next to whatever he is making himself.  (Eggplant, zucchini, red pepper, onion, and portabella shrooms are my favorites)  Then I usually make a balsamic dressing that I drizzle them with.   I tend to like the veggies kinda of charred, might be a pregnancy thing though.

    If it is real hot out and H doesn't want to grill and I don't want to turn on the oven we commonly have "finger food night".  Usually consists of cheeses and cracker, hummus and pita.  

    This summer we are going to experiment with more grilled pizzas.  

     

    Great now I am starving.  :)

  • I struggle with this too.  However, my problem is that I have a hard time breaking away from my meal planning when it's hot out.  So, if it's lasagne day, than I have to make a lasagne, even it it's hot out.  And then my house is about a million degrees from the oven being on for an hour.  And then I'm super crabby.  It's a terrible situation, really.  Tongue Tied

    The ideas in this thread are good for me to read.  I must add more flexiblity to my meal planning.

    And to answer your original question, so far this week we're eating whatever I've been able to scrounge up because we were gone for the weekend and I haven't been grocery shopping yet.  Monday night it was mac and cheese with veggies.  Last night it was General Tsao's chicken with rice and a salad.  Tonight, it's goulash.  Also tonight, I'm meal planning and grocery shopping.

  • We're on salad dinners this week to make up for extra indulgence over the past weekend.  Here are a couple of vegetarian ideas though:

    Recommended before - Mock Tuna Salad

    Haven't yet made this, but it's on my list to make soon - Greek Garbanzo Bean Salad

    Corn Salad 

    Chilled Beans and Rice - Could use as filling for a tortilla if you wanted it warm

    Some green salads - Mandarin Almond and Spinach Strawberry

    For the grill perhaps some veggie kabobs or black bean burgers.  Oh, and this recipe is fantastic - Grilled Veggie Sandwich.  I'm looking for some kind of chilled quinoa salad to make this week too.

    Not quinoa, but sort of along the same lines, this is a really good chilled couscous salad, if you're looking for ideas.  It goes great with grilled meals.

    Mmm, that looks delish.  I think I actually could sub quinoa for the couscous and that it would still be super tasty.  Thanks for the rec! :-)

    Here's a quinoa salad that I really like. (Very similar to the couscous salad, which I've also made before and is delish!)

  • This wouldn't be specifically for hot days, but it came together really quick and used only one pan. I concocted it for dinner tonight. Heat 1T olive oil, add chicken cut into bite sized pieces that has been sprinkled with chili powder (portabella mushrooms would be a good sub for vegetarians) and cook until chicken is done. Remove chicken with a slotted spoon and set aside. Add baby spinach to the pan (I used two large handfuls) and saut? until just wilted, sprinkling with a dash of cumin and black pepper while cooking. When spinach is wilted, add cooked quinoa (I used some that was leftover from the night before) and a can of rinsed and drained black beans. I also added a bit of salt to the dish at this point. Add in the chicken (or mushrooms) and heat until warm. It was pretty tasty and very nutritious!
