the hormones are killing my caboose and DH is finally up for a diet so I'm not messing around. i've got dinners pretty well covered, but do some of you have ideas for low carb lunches? I get kind of bored with salad and meat/cheese wraps all the time. I'd like something that I can also feed the kids, although they'll eat pretty much anything.

I ate a lot of peanut butter sandwiches on light bread when I had GD
) A chicken and cheese quesadilla is pretty easy, too.
I'm terrible with lunches and basically eat the same thing every day...I hope someone has some good suggestions for you!
Check out the south beach diet. There are lots of good ideas and recipes.
When I was doing the low carb diet (which I should go back on...), I ate a lot of eggs, veggies and jello. Oh, and cheese.
Lettuce wraps? This could be for PF Changs style lettuce wraps or even burgers, tacos, etc.
Fajitas sans tortilla would also be tasty (and easily made the night before).
You can do a TON with omelets. Cheese, proteins, veggies... you name it, and it can be done in an omelet.
I think Cambell's has some low carb pasta (I remember seeing something like that there) so that would be a good option because God only knows we can't go totally crazy

when you say "low carb" do you mean no bread/pasta type stuff?
Please don't cut out veggies/fruit, because they have 'carbs' in them. lol! my friend does this, and any diet that says to cut out something is so not a good thing. Let me go through my food logs and I'll send you some good lunches.
By that I mean no simple carbs. I'm fine with veggies, berries, limited carrots, snow peas, etc. As long as the carb has good fiber it's okay. I'm okay with some things like brown rice, etc but I'd rather lower my gluten intake in other grains as well. I can pick and choose and/or substitute as needed though so any recipes or ideas are awesome!
