Weekly menus? I need inspiration

What's everybody planning to eat this week? And does anyone have a good mac n cheese recipe, particularly one that involves mozzarella? Thanks.

  • I try to keep my menu simple.

    Monday: BBQ chicken, oven fries, and steamed broccoli

    Tuesday: Spaghetti ( I add Italian sausage) 

    Wednesday: Homemade chicken teriyaki stir (chicken, brown rice, snow peas, and broccoli)

    Thursday: Sirloin steak with roasted asparagus and whole grain herb rice-a-roni

    Friday: pizza

    You can use whatever kind of cheese you would like which is what makes it so yummy! I normally use colby jack but moz is good in it too!

    So far we my menu is as follows:

    tonight we had toastadas 

    tomorrow we are having http://thepioneerwoman.com/cooking/2011/03/sour-cream-noodle-bake/

     and other than that I don't know what else we are going to have. I need to use food that is here so we stop wasting things. I'll probably do pancakes one night and maybe Cranberry Chicken on another night.

  • Well I'm no help...I'm doing a detox/cleanse this week so I'll be dining on pretty much a steady diet of vegetable broth Party!!!

    And even if I wasn't, we're in "clean out the cabinets" mode so we don't have as much stuff to move in a few weeks.

    Tuesday: pasta shells with escarole and sundried tomatoes

    Wednesday: leftovers

    Thursday: Baked ziti (you could use mozarella for this!)

    Sat: nothing, I'm solo

  • I'm on my own this week so I'm just doing a lot of light salads (one with strawberries, goat cheese, walnuts and raspberry vinaigrette), and soups (creamy artichoke soup, probably broccoli and arugula soup too.) I did want to try that beet and goat cheese risotto Stef posted a few days ago too. And I've been craving homemade pizza...
  • Sunday we had a terriyaki chicken stir fry from Trader Joe's

    Last night we had spaghetti with turkey meat sauce

    The rest of the week I'm not sure what we'll have. Maybe breakfast for dinner, meat balls, and pulled pork.

    We're in "Clean out the cabinets" mode, too. So tonight it's lamb chops (which you don't eat) with barley "risotto" (which you might) that'll have diced mushrooms and um...whatever else is in our fridge.
