When it is hot the last thing I want to do is cook dinner. But we don't have many cold dinner recipes. And I often don't want to cook many of the dishes we've had all winter. We try to grill but we need more variety for the summer. What are your summer favorites?

We have BLTs like once a week in the summer.
Also I like to make caprese sandwiches (fresh mozz, basil and tomatoes on nice bread that we grill, drizzled with olive oil, balsamic vinegar, salt and pepper)
We do salad nights a lot too.
Even though it's hot, I like to make pasta with light sauces like lemon pepper, or pesto because at least I don't have to turn on the oven and heat up the house.
I was just telling JT last night that we need more variety on the grill.
I cooked a chicken in a satay sauce on the grill the other night and it was very good.
We also live on pasta salad, I just take tri-color pasta and throw in mini-pepperonis, cheese, green pepper, onion and other veggies and a bottle of Italian dressing.
I have a good recipe for spicy shrimp, I can dig out at home.

Speaking of pasta salads, anyone have a good one to share? I kind of just throw it all together but if there is a recipe worth sharing, I will take it.
Mmm, that actually sounds good. I think my taste buds are finally growing up! Oh, and I just planted a basil plant, so I could pick some fresh to make these.
