Do you make your meals ahead of time?

Joe and I are always in a spot when it comes to making dinner. Right now, he plays softball 3 days a week, and I have no desire to cook and clean the kitchen when I'm making light meals. Does anyone make all of their meals ahead of time? How does it turn out? Are there any recipes you can share that work well?

  • We've done cooking-for-the-week and once-a-month cooking before. Right now we tend to make a lot of meat/proteins on the weekend (eg, grill a bunch of chicken). Makes throwing together dinner a lot faster!

we do this too. In fact, I am making some homemade pasta sauce so that I can use it for pasta dishes and homemade pizza.

I have fajitas in the crockpot for tomorrow's dinner since Brian and I will not be home until after 7 tomorrow.

Do you have a crockpot? That can be a lifesaver. Most nights I am lucky to have 20 mins to make dinner so I need something fast!

I do, but the crockpot is hard sometimes... my old one had a timer on it, then it would switch to warm after the 4-8 hours was up. That one broke, and I'm gone up to 12 hours a day sometimes, so everything is overcooked. Blah!

I think I need to get back into buying a rotisserie chicken on Sunday's, taking it off the bone, and making fajitas, salads, etc. with the chicken. Any other ideas/?

I haven't cooked in so long!  Eek, but I do the rotisserie chicken idea except with chicken breasts.  I boil and bake enough to last a week with no seasoning and shred it so we can use it in different meals.  It works awesome.  Tacos one night, pasta another.

  • Chicken is a good idea. Do you like lasagna (veggie or meat) or enchiladas? Those go last a while.

I usually dedicate a saturday and/or sunday for most of my cooking and then all I have to worry is about side dishes for the meals.

oh we do pasta w/turkey meatballs and some garlic bread.

  • I've made things like baked ziti/spaghetti or lasagna a few days in advance and just kept it in the freezer until I was ready to cook it. It makes life so much easier to just pop it in the oven when you get home from work.

  • I did Once-a-Month cooking for three cycles (each cycle lasted us about 2 months) when Mariela was born and it worked well for us when she was little.  We've gotten away from it now though as we got bored with the recipes I had.  I will do it again and switch it up with different recipes when we have #2.  I blogged about my experience with it (link in siggy).
