Are you looking for things to do inside or outside? Do you go a lot have you done most of the touristy things?
The best day I ever spent in the city was one where we didn't do much. We wandered around spent time in Central Park wandered all around just walking and looking at stuff then went to the empire state building to watch the 4th of July Fireworks.
If you go during the day, the rowboats in Central Park are fun. If your athletic bike riding or roller blading are fun too, basically getting lost in the trails. I used to love going down and roller blading for hours in CP.
Walking around Lil' Italy or Chinatown and finding new places.
I like Augustbride have found going without plans and just finding places have been some of my best times.
