Does anyone have a good one for chicken salad with craisins and such?  I'm thinking of Pret in DC's chicken salad, which has craisins and shredded apples.  I randomly decided to bake a turkey breast on Sunday and now I need to do something with the leftovers.

  • I absolutely love this recipe. It includes apples, craisans, celery, pecans, etc. I really like the curry in it but if that's not your style, you could leave it out and I'm sure it would still taste great.

  • This one is my favorite (sorry for the weird format of the recipe - it's a recipe from the internet, with my notations on what I changed, saved on Gmail so I can replicate... I'm practically incapable of following a real recipe!)

     

    1 pound skinless, boneless chicken breast halvesI think I used about 2 lbs - I baked it in the overn on 350, and just added a little salt and pepper for taste, then cubed it.  You can also sort of poach it on the stove, or cut up precooked chicken.
    1 1/2 cups chopped celery  
    I added less celery, I think.  Only 1 piece of stalk from a large head 
    1 1/2 teaspoons chopped fresh tarragonI used more tarragon.  I basically just used a handful from the bunch, and chopped it up
    1 cup chopped fresh parsleyI used less parsley - again, just a handful chopped up. 
    1 1/2 cups mayonnaiseDidn't measure this.  Just put a few spoonfuls in.
    1 cup raisinsUsed craisins instead
    1 cup diced red onionI didn't use a whole cup.  Probably about 1/3-1/2 of a large onionI also added one or two handfuls of chopped up cashews.  Instead of chopping, just put them in a ziplock & smash them with something.  That works too.

     

  • Here is what I always use after Thanksgiving:

     

    Turkey Waldorf Salad

    Great for leftover Thanksgiving turkey. Good as a wrap or over lettuce.

    2c shredded leftover turkey
    2 stalks celery, sliced
    1 apple or pear, chopped
    1c raisin/dried cherry mix
    1/2c pecans, toasted, chopped
    1/2c light mayo
    1tsp honey
    1/4tsp salt

    Whisk together mayo, honey and salt. Toss together.
