I have rediscovered vegetables!

I am not a vege person. I don't really care for them. I try to occasionally eat salads, and I'll frequently nuke some frozen broccoli when I bake chicken, but that's as far as it goes.

My mom, the personal trainer and health nut that she is has turned me on to roasting veggies. We're talking brussel sprouts, parsnips, asparagus, and other things that I would NEVER eat (and broccoli which is better roasted then defrosted). You roast them and they become salty and crispy and amazing. 

Cut them up, sprinkle with salt, and garlic, drizzle on some EVOO 400? for 40-ish minutes and TA-DA veggies that I actually want to eat.

  • I can't imagine going a day without eating veggies, but I hated them as a child.  My sis watches the cooking show Bitchin Kitchen and she shows how to roast all those vegetables and make them good - here's the link.

     I've actually never had brussel sprouts, but I eat vegetables raw/steamed/roasted/blanched /etc, so I think I'd like them.

  • This is so funny to me, because I'm a a vegetarian, and while my diet is obviously comprised of a whole lotta other stuff, going a day without veggies would leave me with....fruit?  beans? starches? haha  Veggies in all forms make up a HUGE part of what I eat, needless to say. 

    I'm happy for your return to vegetables. :-)  The vegetables are happy as well!  Try roasting then drizzling with balsamic too.  Quite tasty. 

  • yummy! I'm love veggie lover. Roasted vetetables are deff. one of my favorite ways to prepare them. I also love grilling summer veggies with a little olive oil and garlic :) MMMMMM good!

    I do this all the time! So tasty. Although I usually only roast the veggies for about 15-30 minutes, depending on what it is.

    Mmm, now I wish I had some. Must go grocery shopping...

  • I also am Vegetarian, but often think I could eat more fruit and vegetable's. 

    Recently DH and I have been making Vietnamese rice paper rolls at home, they are easy to do and very tasty.

    If you want a variation on your roast veges, put some tinned chopped tomato and curry power on them. Yummy!
