Whipped cauliflower with goat cheese... Left Hug I ate almost a whole head of cauliflower by myself this weekend & I would like another huge bowl of it right now. I also think I'm going to try your zucchini planks this weekend. I'm loving your blog!

  • Yay! Glad you liked it. DH hates cauliflower, but will tolerate a tiny, tiny bit with gobs of goat cheese, so I end up eating the whole head myself too :) 

    The planks are good, the aioli with them makes them amaaaazing. Glad you're liking it! I've been a big slacker lately due to the fact that I can't eat much variety, blah!

  • DH had actually mentioned wanting to try mashed cauliflower a few days before CD posted a request for the healthy mashed potato options. It was perfect timing. :) He definitely liked them, but just had a normal sized serving. I on the other hand opted for a small portion of the meat he made and filled the rest of my plate with cauliflower goat cheese goodness. The zucchini sounds awesome. We eat a lot of it so I'm excited to try a new recipe.

    I saw the pics on your blog from your shower. Your mom's fruit salad was awesome! I also saw a small corner of the cake. How did it wind up turning out?

  • Luckily, my sister came to her senses and realized that we didn't need an elaborate cake. And we wouldn't have much time to make it (we went to a wedding the night before the shower) so she just ordered a simple one from a local bakery! 

    The carriage was seriously adorable, I'm so glad my mom made it. I showed her a photo and she took on the challenge. She wanted to do scalloped edges, but time got too short so she zig-zagged!

  • Can someone tell me how to make the cauliflower more creamy, and less "grainy?" I tried it once, and even though I LOVE cauliflower, even I didn't like it. It just tasted like a bland, overcooked and very cheesy piece of cauliflower. DH doesn't like it in any form, so I tried to do something different, and it BOMBED!

  • I can't help with the grainy issue, but what did you boil the cauliflower in to soften it? Ashlee's recipe called for vegetable stock and it gave it such a good flavor. Definitely helped it from being bland...imo. If you bolied in vegetable stock, I've got nothing. lol Sorry.

  • Was it grainy when you mashed it? Or steamed florets were grainy?

  • Did you just mash it? I threw mine in my kitchen aid food processor.
