well, i dont really have anything to contribute, as i've been working SO much that i havent had time to cook...and the one day i did, we lost power for almost 10 hours and i had to throw away just about everything we had in the fridge 
BUT my mom made us AWESOME shepherd's pie on sunday. and it was SOOOOOOOOO good. be jealous!

I've just been making easy dinners the past two weeks. However, while on vacation, I made something awesome.
Parmesean crusted filet mignon. I combined a few recipes I found online... and used 1 part fresh grated parmesean, 1 part fresh bread crumbs, some salt, pepper, various spices (I used a pre-mixed Weber grill spice shaker thingy), and olive oil til it looks like a good consistancy. Grill the filet for 3 min/side, then I think I did 2 min per side and for the last 2 min I added the crust. The second time I did this I made them using the broiler in the stove, and the crust was sooo much better!
We had grilled corn on the cob, baked potatoes and a caprese salad with them.
I'm rocking a favorite summer dinner tonight...BBQ chicken, homemade mac n cheese, biscuits, corn on the cob and sauteed veggies...YUM!
here's my mac n cheese secret: velveeta, half and half (or original Coffee Mate) and worsteshire sauce. I never measure, just mix em up with cooked pasta until it's super creamy and cheesy....not the healthiest, but definitely the yummiest!
