We were invited to a surprise birthday party for one of my DH's cousins. They are having it at a park/pavilion that you have to pay to get into. O.K. fine no big deal but then we are told that they are not supplying food but charcoal grills are available.
My MIL and I weren't keen on cooking there so we were thinking of making a pulled pork to take with us but does anyone else have any other suggestions for simple sides besides chips that would do well in the weather?
Re: Food idea needed
You have to pay to get in and provide your own food? So they aren't throwing a party - they're just spear-heading a meeting. That's crazy!
I love cole slaw with pulled pork, but a mayo-based one wouldn't do well in the heat(which is my preference), so maybe a vinegar-based one? A mayo-free potato salad or pasta salad, or a fruit tray would be nice.
I have a recipe for a simple pasta salad - that does't use mayo - that could work.
fruit salad
veggie tray
pasta salad:
-any shape pasta (cooked....obviously)
-any veggies - I usually use, cherry tomatoes (quartered), cucumber (diced), onion or scallions (diced)
-zesty italian dressing
-salad supreme seasoning
*mix pasta and veggies
*add dressing (about 1/2 to 3/4 of the bottle when all is said and done) and seasoning a little at a time
*stir
*add more of each and sample until you get it to the taste you desire - maybe a little ground black pepper to taste
(the longer you let it sit and marinate, the better it is)
Yeah, not the type of party I'd ever throw and only going because it is family.
Thanks for the ideas.
I agree with fia. One time we were invited to a friend's, boss' house for NYE, all we had to bring was a dish to pass and whatever we wanted to drink
. I figured, 'heck, we can have that at home AND we don't have to drive.' We stayed home. I digress.
At any rate, we've done the Alton Brown Cold Fashioned potato salad
