What do I make for the vegetarians?

I'm having a Father's Day cook out tomorrow. On the menu: BBQ pulled pork sandwiches, marinated skirt steak, mashed potatoes, coleslaw, some sort of cold corn salad, green salad, veggies and dip.

My bro and SIL are vegetarians and I'd like to get something for them to eat as their main course and not relegate them to only eating side dishes. Any ideas?

  • you could do a burrito bar instead. 

    still cook up the pork and steak but let people add it to burritos themselves. 

    veggie burritos are a staple in our house.

    Took maybe 10 minutes to prep then just pop it in the oven.  I served the ratatouille over crusty french bread and smeared some goat cheese on it like they suggested in the recipe.  It was the perfect summery dinner!  I imagine it would be good room temp too if you wanted to make it in advance.  I planned on trying it cold today straight from the fridge but DH finished the entire dish by himself last night!

     Yep. Also great on the grill are summer squash, zucchini, and eggplant.

    This!  I would actually probably do some kind of stuffed portabellos, which feels still very BBQ.  And since they can eat the other sides, you just need something that feels like a main course. 

  • I'm a vegetarian and I hate portobellos. I appreciate when someone has veggie burgers on hand. Usually this is a relief for the host because it's less work. I don't know how militant your family is but I don't care if it's cooked on the same grill as the real burgers (though it's probably a good idea to ask).

    The other ideas are all good but having a protein source is key. Otherwise I eat 2x as much of the side dishes because I'm starving...
