I haven't tried it yet, but I keep meaning to.
Southwestern Egg Rolls, I am sure you could easily swap out the filling for pork, cabbage, etc...
The method is to bake them on a cooking rack on top of a cookie sheet. It works really well and they get nice and crisp.

i have found that oven-frying stuff works realllly well if you have one of those cooling racks that's made completely of metal. i just put it on top of a cookie sheet, then bake the item.
it works FANTASTICALLY for baked chicken parmesan and french fries. because it's getting cooked from all around, there's no soggy bottom.
