I haven't made them yet with chicken, I bet they would be good. Maybe add a bit more oil since chicken isn't as fatty as pork.

Tonight: DH's request for Father's Day -- eggplant parmesan and chocolate chip cookies (DD and I made those yesterday). I also managed to track down some Shiner Bock up here in NJ...he is a lucky man

Just realized it's a red meat kind of week in our house. That is very rare!
ok! I told DH you tried them with pork. he wrinkled his nose and said Pei Wei/PF Changs are with chicken *le sigh*

T - BBQ chicken pizza
W - Caprese sandwiches
Th - Ceviche, chips, and guacamole.
F - Something quick and cheap, probably Freebirds.
S - Friends coming over: margaritas, chipotle bbq empanadas, "flaming blonde" pizzettes, goat cheese & candied jalapeno crostini, chips & fire-roasted/pineapple salsas, white chocolate-habanero ice cream, mexican hot chocolate brownie bites.
S - Burgers, coleslaw, & homemade chocolate ice cream
M - Summer Vegetable Baked Ziti
T - Chicken Meatballs w/ Peanut Sauce & Asian Brocolli
W - Crockpot Rustic Chicken over egg noodles

Recipes please!
Try ground turkey thighs. I have a recipe that I do in the crockpot, and I always used ground turkey.
M: lemongrass pork chops, sauteed baby kai lan, spicy mango salad
T: parmesan snapper, roasted broccoli, couscous
W: asian shrimp lettuce wraps
Th: out for little one's 6th birthday
F: chicken kabobs, orzo salad

Holy crap, both of y'alls menus are drool-worthy!!! OMG! I'm hungry just reading them. How do y'all come up with such great menus? If we ever have people over, our menus are so BORING. Do you get them from a certain entertaining book?

I forgot which blog I got the Rustic Chicken from.
Rustic Chicken
??1 to 1 1/2 pounds chicken breast tenders
?1 15 ounce can diced tomatoes
1 15 ounce can artichoke hearts, quartered?
8 ounces fresh mushrooms, sliced
?1 packet dry chicken gravy mix?
1/4 chicken broth
??Combine all ingredients in a crockpot; stir to combine. Cover and cook on low 6 to 8 hours. Serve over pasta or rice.

T - Hot Dogs, haven't decided on a side yet.

S - Made Dad our traditional King Ranch Chicken Father's Day dinner.

We do something similar to this, but we add mushrooms and red bell peppers and our crawfish are the ones we painstakingly peel and freeze when Kerry does a boil.
