Bakers - thanks for all the info.... Now I have 1 more question... Her party is Sunday when is the earliest I can bake the cakes and they won't go bad? How about frosting them?
Mary - a while back I think it was you who mentioned an iphone app to track how far you have gone in a work out. WHat was that?
Jo - I have wanted to ask you this for a week and keep forgetting? Where was the warrior dash that Matt did? Up this way? I have a ton of friends who did it last weekend. It looks awesome.

You can bake it now and freeze it. It sounds weird, but I do this with cupcakes all the time and you can't tell the difference. If you don't want to freeze it, I wouldn't bake it earlier than Friday. I would frost it the day before (obvi after it's completely defrosted if you freeze it) and keep it in an airtight container until the party.
2012 Reading Challenge
Wrap it in saran wrap and then in aluminum foil, and put in a ziplock. Defrost it at room temperature (shouldn't take too too long) in the wrapping, so the condensation ends up on the outside of the wrapping instead of the inside.

I made M's cake on Thursday, frosted, put the filling in, and covered with fondant and stored in fridge. I took it out on Saturday morning and added the fondant decorations an hour before her party with no issues. I did not cover it in the fridge as I didn't want condensation on the fondant when it warmed up out of the fridge on Saturday. I didn't want to have to do anything with the cake on Friday which was her actual birthday.
For the baby shower I just made the cake and decorated it the day before and all was fine. I also stored it in the fridge over night.
Sorry I didn't respond to your other post, but I'm bad at estimating how much batter I need. I had to quadruple the last recipe I used and it still was short!! I used a recipe for Vanilla Swiss Merengue Buttercream on the baby shower cake that was to die for. Brie gave me the idea. It takes longer to make, but it was amazing.
Yep. They stayed the night in Joliet. So, somewhere around there. He said there we TONS of people there. There were a lot of different starting times. I wanted to do it, but they didn't ask me and booked everything before I had a chance. My BIL actually told me on Sunday that they were still deciding if they were going to "let" girls do it next year. I laughed at him and told him that saying that pretty much guarantees that I will.
