Recipes

Does anyone have any good recipes they have tried lately that are fairly healthy?  I am looking for more things to make for dinner and need some ideas! :-)

  • YES! This was amazing. I followed the receipe but added cilantro to the salsa:

    I also forgot the olive oil, but it was still good. And I cooked it on my grill pan for a little bit, then finished in the oven. Served with Fajita steak rice (store bought...those packs that are usually on sale 10/$10), and charro beans.

    She gave me a cheesecake based on one of her recipes the other day and holy Toledo was it amazing. I am trying the enchiladas in a few weeks when the other half gets home.

    1000 Comments Fifth Anniversary 250 Love Its Name Dropper

    This is one of my favorite fish recipes. It is quick, easy, healthy, and delicious!  I also use that marinate for other fish besides mahi mahi, including scallops.

       I also made chicken enchiladas the other day, and did some changes to my normal recipe that made them pretty healthy.

    1. I quartered and boiled a whole chicken, cooled and shredded the meat.  I added salt, pepper, cumin and a little red pepper to season. 
    2. For the green sauce - Boiled 10 tomatillo's, 4 jalapeno's, 1 onion, and one head of garlic until tender.  Mix all in a food processor with salt and cilantro. Add jalapenos slowly to desired heat And garlic to your tolerance (I LOVE lots of garlic).
    3. Take corn tortillas and dip them in the leftover boiling water to soften.  added chicken and some greek yogurt and roll.  After I filled the casserole dish with enchiladas, I poured the green sauce over and added a bit of 2% cheese.
    4. Bake in 350 degree oven until cheese melts.
    This is probably not something easy to make after work one day, but great if you do on the weekend, and heat in the oven once you get home.

    We love having the green sauce around to add to all sorts of things.  And any extra chicken can be used for nacho's, taco's, quesadilla's, or freezes very well.

  • I couldn't find the exact recipe, but it was basically a mini pizza and instead of using dough for the crust, you use a portobello mushroom cap.

    Here is one of my favorite things to make during the warmer months:

    Spinach Turkey Burgers

    1.25 pounds ground turkey

    1 clove garlic, minced

    1- 10 oz. package frozen chopped spinach, thawed and squeezed of all liquid

    1 egg

    1 small package crumbled feta (low fat)

    Mix all ingredients and break up the spinach. Form into patties and grill.

     

    A lot of people have asked me for this recipe after I make it for them.

  • Enchiladas from http://theomgmom.com/?p=297  except I add bell peppers (whatever color) to give me more vegetables and I just use that recipe as a base.

    Like Michelle I make my own green sauce and use this recipe: http://www.ourbestbites.com/2010/03/green-enchilada-sauce/ however next time I am going to try to roast them before I mix it all up.  I make a large batch at once and freeze it. 

    I will be bringing a variation of these to the g2g:

    Lentil Sloppy Joes

    Ingredients:

    1 cup lentils, 4 cups water, 1 Tablespoon olive oil, 1 medium yellow onion (diced small), 1 green bell pepper (diced small), 2 cloves garlic (minced), 4 teaspoons chili powder, 2 teaspoons oregano (dry), 1 teaspoon salt, 8oz can tomato sauce (or ketchup), 1/4 cup tomato paste (or about half a 6 oz can), 3 Tablespoons brown sugar, 2 Tablespoons vinegar (I use cider vinegar), 1/4 teaspoon ground mustard (or regular mustard).

    Instructions:

    Cook lentils according to directions on bag.  Drain any excess liquid and set aside.

    Preheat olive oil in large pan over medium heat. Saute onion and pepper in oil until softened. Add garlic and saute 1 minute more.

    Add lentils, chili powder, oregano, and salt, and mix well.

    Add tomato sauce and tomato paste, ground mustard, brown sugar and vinegar - cook for ten minutes on low.

    Let sit for about 10 minutes before serving.

    Alli, I made turkey burgers just like that last week, but with black olives in there as well.  They are delicious! I kind of went with a Mediterranean theme and made a cucumber sauce to put on top. 

    I'm going to have to check out the skinnytaste and eatingmachine blogs.  Sounds good.

    Jaymie - The link to your green sauce is taking me to food network for a "Moo-less Chocolate pie".  But copying and pasting got me to the green sauce.  Looks good, but a lot more work.  However, it probably has a lot more flavor than mine.  :)

    Weird.  I think I fixed it.  Actually you can put it in a crockpot and forget about it.

     BTW, is there something different about almond milk?  Because I have had ALOT of energy today.  It's almost 4:00 and I am only a tiny bit sleepy and have had zero caffeine today.  The GMs didn't do anything for me when I made them with regular milk.  I did add more spinach I think to this one though since I'm trying to use it up.

    My BFF is convinced that I do--but it will be interesting to see because when I made the GMs with regular milk, they hurt my stomach and I blamed it on the spinach.
