I'm short on inspiration, and I am trying to resist take out.  So, WFD?

  • I really, REALLY want to order a pizza - but JJ and I always have a Mommy/Son "date" on Friday nights, so I'm resisting.

    I made baked chicken last night [with olive oil, salt, pepper and basil], and I'll whip up some mashed potatoes when I get home. I'll try to sneak some spinach in so he'll get some veggies, but I may have to sneak that into a smoothie.

  • Crock pot BBQ chicken and sauteed veggies - squash, zucchini, and red pepper.

  • Something with chicken. Hopefully DH is a little more inspired than I am.

    Side note: we bought a bag of potatoes for quick, easy sides. No room in the fridge, so DH put them in the basement. Now they're all growing and it seriously freaks me out. If we have potatoes now, DH has to get them and clean them. I'm not touching them!

  • Oh, and I wandered over to What's cooking to look at their WFD post, and I am totally intimidated! 

    And I've never put potatoes in the fridge.  They always just live on top of the microwave with the onions.

    We don't have any good places to do this, and it's a 5lb bag. So I thought "well a lot of people do this in their cellars, should be the same right?" I just didn't know they'd keep going.

    Ok, DH is making mexican chicken. Basically you put chicken breasts on a baking sheet, cut 3 slices in them, then top with sour cream, salsa, crushed tortilla chips and some shredded cheese. Bake at 350 for 25 min or until juices run clear.

  • My mom brought us over some meatballs from a specialty store, so those, pasta, and garlic bread.

  • We had been invited for dinner with one of Rodgers' friends. But...maybe he didn't clear it with his wife because when we called for directions to their house yesterday, he *ahem* uninvited us. He didn't offer explanation. Fortunately we had some leftovers in the fridge. Some chicken I'd cooked in the crockpot with corn, beans, and canned tomatoes, with homemade chapati Rodgers whipped up this afternoon.
