Recipe Swap: Peaches!

I'm late this week, so sorry, I was vacation Smile  So in honor of having just come back from the south, let's do peach recipes! 

I haven't actually tried this one yet, my mom sent it to me - the best part is that you don't have to turn on the oven. 

FROZEN PEACH TORTE

2 cups mashed peaches (about 6)

1 cup sugar

1 tablespoon lemon juice

1 cup heavy cream, whipped

1 package of Archway coconut macaroons

Peel and slice peaches into a large bowl.  Press them with a potato masher, or you can whip them in a food processor or blender.  Six peaches make about 2 cups mashed.  Add sugar and lemon juice.  Fold in the whipped cream.  Cover the bottom of a 1 qt. pie plate or baking pan with 6 or 7 crumbled macaroons.  Pour in the peach mixture.  Top with more crumbled macaroons.  Cover with aluminum foil and place in the freezer for 4 to 6 hours.  Cut into wedges, squares or slices and serve.

Makes 4 ? 6 servings

  • Bucks made me a peach cobbler that was quick and easy but addictive. Please to be posting this one here. :)
  • I make this fruit salad all the time but sub 3 peaches for the papaya and mango.  

    Ingredients

    • 1 papaya, peeled, seeded and cut into 1-inch chunks
    • 2 bananas, peeled and sliced 1/2-inch thick
    • 1 mango, peeled, stoned and cut into 1-inch chunks
    • 1 cup pineapple, cut into 1-inch chunks
    • 1 pint strawberries, hulled and halved
    • 2 tablespoons fresh lemon juice
    • 2 tablespoons fresh lime juice
    • 1 tablespoon dark rum
    • 2 tablespoons sugar, or to taste
    • 1 bunch mint, leaves only, coarsely chopped
    • Tiny sprigs of mint, for garnish

    Directions

    In a large glass serving bowl or picnic container, combine all the fruits and toss very gently to mix. Sprinkle the lemon and lime juices, rum (if using), sugar and mint over the top and again toss gently to mix. Garnish with tiny mint sprigs before serving.

    2/3 cup white peach puree (use yellow peaches if white not available)
    1 teaspoon raspberry puree
    1 bottle chilled Italian sparkling wine such as Prosecco orAsti Spumante Brut

    Instructions

    2/3 cup white peach puree (use yellow peaches if white not available)
    1 teaspoon raspberry puree
    1 bottle chilled Italian sparkling wine such as Prosecco orAsti Spumante Brut

    Place 1 1/2 tablespoons puree In the bottom of each flute and add 2 - 3 drops of the raspberry puree. Add sparkling wine and serve.

    Raspberry puree: Puree fresh or frozen (thawed) berries in a food processor.

    Peach puree: Peel fresh peaches, cut up in pieces and blend in a food processor.

    Serving glass: Tall champagne flutes

  • i'm pretty sure this is the recipe I use for peach cobbler...although i don't ever used canned peaches....always fresh :)
