In no particular order...
*Filets, roasted spicy cheddar potatoes, sauteed spinach
*Parmesan and pesto tilapia, jasmine rice, squash
*Barbecue baked potatoes
*Chicken pasta with bell peppers, artichokes, and sundried tomatoes
*Pork roast with sweet potatoes and apples
*Cheese enchiladas, mexican rice, grilled pineapple. I want to do sopapillas for dessert...anyone have a good recipe?

Tue: hopefully leftovers...but i'm doubtful there will be any so it maybe be a $5 pizza

Easy week here.
Sunday: Fajitas.
Monday: Bunco here. Chicken and sausage jambalaya, french bread and salad. Brownie sundaes for dessert.
Tuesday: Probably pizza, while we pack.
Wednesday: Dining car of the Texas Eagle while heading to Chicago.
Thursday - Tuesday: Chicago.
Sun--out for Pho
Mon--chicken gyros w/tzatziki; hummus and veggies
Tues--leftovers
Wed--pistachio crusted salmon, roasted fingerling potatoes, fruit salad w/balsamic dressing and goat cheese
Thurs--probably out before seeing Scott Biram
Fri--TBD. out or something easy after soccer.
S: Rigatoni with salsa cruda
M: roasted brisket, honeyed carrots, salad
T: moroccan lamb burgers w/ tzatziki and cucumber feta salad
W: out for Kylie Minogue concert
Th: brisket empanadas, herbed black beans, grilled zucchini

Thai Basil Chicken
2 cups basil leaves, packed (Thai preferred)
3 cloves garlic
1/2 tsp chili garlic sauce
2 tbl fish sauce
1 tbl oyster sauce
1 tbl soy sauce
1 tbl sugar
1 tsp white vinegar
1 1/2lbs ground chicken
2 tbl olive oil
1 med onion, chopped
Place garlic, 1 cup basil leaves and chili garlic sauce in food processor. Pulse until finely chopped. Transfer 1 tbl of this mixture to a small bowl with the fish sauce, oyster sauce, soy sauce, sugar & vinegar. Stir and set aside.
Place remaining garlic/basil mixture into a cold 12" skillet and set aside.
Place the ground chicken in a bowl with the remaining 1 tbl fish sauce and refrigerate for 5-10 min.
In the cold skillet with the garlic/basil mixture add 2 tbl olive oil and onions to the pan. Saut? over medium low heat and allow herbs and onion to soften.
Once onion is softened add the chilled ground chicken and stir constantly and break the chicken up as it cooks. Continue stirring until chicken is no longer pink.
Add garlic/basil sauce mixture that you made previously. Cook about 1 min.
Meanwhile, chiffonade the remaining cup of basil leaves and add them to the pan and cook 1 minutes or so until basil wilts. Service over rice

Forgot that Monday is Fourth of July! Baked potato soup will move to Sunday and I'm thinking maybe hot dogs, corn, and leftover coleslaw for dinner....plus maybe some homemade ice cream with mix-ins (we just got an ice cream maker with a built-in candy crusher)

What time should I be there tonight? I haven't had smothered venison since I was a kid.
I'm totally winging it. LOL I have these venison steaks though and I need to cook em! 4.5 months til hunting season and I still have a freezer full.
So I'm adapting my mom's smothered steak recipe to them. Hopefully it turns out pretty good!
My kids have never had edemame, it should be interesting. LOL
