Well, for Christmas this last year, I made Cake Balls and it was a huge hit. So, I am going to do the same thing for the 4th of July weekend, with a bit of patriotic twist by sprinkling on blue and red sprinkles while the coating is still wet! For anyone wanting to copycat, I am sharing the recipe because these things are just frickin' amazing! They also lend themselves well to freezing/thawing when needed.
Cake Balls:
Ingredients1 Cake Mix1 16 oz Frosting1 Pkg chocolate or vanilla flavored confectioners coating (Almond Bark)
DirectionsPrepare the cake mix according to package directions using any of the recommended pan sizes. When cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended. Form into ping-pong sized balls, place on a wax paper covered baking sheet, and place in the fridge.Coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.Dip the balls in coating using a toothpick or fork to hold them. Place on waxed paper to set.Store in the fridge.
Re: Cake Balls
I LOVE CB....my husband requests them every year for his birthday.
When you add the frosting and make them into a round shape, are they mushy on the inside? Like almost wet-like? I've always wondered if I was doing something wrong or if they were supposed to be that way...aka not the consistency of cake in the ball form.
Does that make any sense?

@Barb - Yes, they are supposed to be wet/mushy.
@Mel - They are SO addicting! Plus, each cake you get like 12 pieces out of, and you get 30+ balls (hehe) out of, so you get more bang for your buck, plus, you usually just want one, and it is WAY less than a piece of cake! : )
