Tasty Tuesday

Well...i dont have much, but the dinner i made last night was yummy. I cant lay claim to the idea for the chicken, as ziggy made it first and i just copied it. Of course his was better

Cracker encrusted chicken, rice cooked in chicken stock and corn on the cob. Oh what a delicious summery meal :)

  • we grilled salmon last night, it was INCREDIBLE!!

    1 1/2 pounds salmon filletslemon pepper to tastegarlic powder to tastesalt to taste1/3 cup soy sauce1/3 cup brown sugar1/3 cup water1/4 cup vegetable oil 
    1. Season salmon fillets with lemon pepper, garlic powder, and salt.
    2. In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.
    3. Preheat grill for medium heat.
    4. Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork.

  • I needed to get rid of the veggies in my fridge last night, so I just threw them all into a fried rice.  Yum!  It was really good, and I made it a little spicier with some sriracha hot sauce!

  • I'm doing up a big pot of meatballs, sausage and tomato gravy today! I haven't been able to eat this since it grossed me out in the first trimester, so I'm pretty excited that I'm over my aversion to it! I'd share the recipe, but I don't really have one...I just dump til it tastes good....I will say though that when making meatballs, egg and fresh breadcrumbs (not dried!) are key :)
