Quinoa Recipes

I bought a bag of Quinoa at Costco and I love it!! My sister has been trying to get me to try it for years. I don't know what took me so long.

I made this last night in preparation of Mike's bike to work and my early start to the day. Breakfast Quinoa

Not too sweet and the nutty flavor of the Quinoa was perfect match for the brown sugar and cinnamon.  It was like healthy blueberry pie for breakfast. Nice work, Martha.

Anyone have any recipes they would like to share with me?

    This is a great side dish: quinoa and black beans.

    We really like this recipe too: quinoa vegetable stew.

  • I have a quinoa tag in my blog.

    We had a new recipe last night that we all loved: Mix 2c. cooked quinoa with some cooked asparagus (I used 8 stalks), chopped onion or green onion (about 1/4 cup total), 2 stalks chopped celery, dried dill, salt, pepper, and the juice of a lemon. Even DS couldn't stop shoveling it in. :) I drizzled it with some Meyer Lemon EVOO from the co-op before serving. 

  • Those all looks good! I have everything I need for the quinoa and black beans. I think I will make that on Thursday.  Definitely will save the others for future use! Thanks!

    Roasted Beet and Goat Cheese Quinoa

    On Sunday I made a Greek Salad Quinoa - cooked the quinoa, let it cool, added a small red onion chopped, a good handful of chopped sun dried tomatoes and probably 3/4 a cup of chopped kalamata olives.  Drizzled w/some olive oil and balsamic and then topped with crumbled feta cheese.  To be eaten plain or served on some spinach for some added nutrition.  I added some dried oregano too but don't know that I tasted it that much - maybe I should have added more.
