marinated cucumbers

does anyone have a recipe for the sliced cucumbers in vinegar?  I don't know what all goes into it, but I like them.  Does it last long in the fridge?  I'm the only one in the house who likes them, so it either needs to last, or be a small batch.  Thanks!

    I just use water, vinegar and pickling salt. I got the "recipe" from my mom, which means there are no exact measurements. I think I usually start out with about 2qts of water and maybe 1/2 c. of vinegar and just throw in a bunch of salt, let it sit overnight and taste to see if it needs anything. Not scientific, I know, but it seems to work.

  • I use sugar, no salt, and pepper.  Usually I drain them and stir in lowfat sour cream.  Yum, yum!

    2 large cucumbers, peeled and sliced paper thin
    1 tablespoon sugar
    1/4 cup white vinegar
    1/4 cup mayonnaise
     
    Vinegar-ey:
    2 lg. cucumbers
    2 tsp. salt
    6 tbsp. sugar
    2/3 c. vinegar
     
    We usually add onion slices to it also.

    Thanks Angie!  I mixed up a batch of vinegar-y ones just now, with a few added seasonings.  Hope they turn out good!  It smells right at least!

  • This is late, but I also salt the cuc's after I am done slicing them and let them sit with a plate or something heavy, to drain the excess moisture, then rinse after a few hours in the fridge.  This keeps them crisp and doesn't water down your dressing.  Also, no need then to salt them again. 

    I do the vinegar-y ones, and do 2 parts vinegar to one part veggie oil, and lots of pepper.  I also add onion (chopped).  Sometimes, if I am not in for a sore stomach, I will add a few pinches of sugar, to tame it down.  Let sit for at least a few hours and enjoy!
