Weekend baking/cooking

Make anything good this past weekend? Any home runs?

  • I made a yummy peach cobbler, some ramen noodle salad (still searching for the perfect recipe on that one, anyone got one?) and these herbed cheddar parmesan crisps. They were super yummy and easy and dh said they tasted like little pizzas. They're made with flaxseed meal, which should be good for my ibs and it's one of the few vegetarian sources of omega 3s. I'm excited to try the flaxseed meal in other stuff too.

  • I made NOTHING this weekend (except everything I made at work but that doesn't count).  My DH. however, made his Sacramento Bee rated potato salad yesterday and it was the highlight of my 4th of July!! YUMMMM

  • I made a pasta salad and a red white and blue berry pie. Other than that not much.

  • I made blueberry pie, coconut ice cream and salted burnt caramel ice cream (the latter ended up tasting more like slightly caramely vanilla ice cream but still good).

    If you're trying to get more flax in your diet, I always put a tbsp. in our smoothies - you just need to let it blend a little more. There will be little pieces but I like the crunch  :)

  • I made french vanilla ice cream with my kitchenaid attachment.  The flavor was divine, but I couldn't get it to harden up in the mixer.  Not sure what went wrong.  We popped it in the freezer in a dish and it hardened right up (had a touch of crystals since it wasn't churning).  Has anyone used the kitchenaid ice cream attachment and gotten good results?
  • Vanilla cupcakes from scratch for yesterday's 4th of July bbq at my in-laws...found the recipe on foodgawker and they turned out really good. I was stupid to use the oven when it was 100 outside but it was worth it.
