I'm looking for ideas for veggie sides for dinners. Whatcha got?

I'm so tired of steamed veggies as a side. So boring!

Here's an example of something a little different but easy. They were pretty good.

    Cucumber and Onion Salad (with a kick)

    Ingrediants

     

    Directions:

    Prep Time: 5 mins

    Total Time: 4 1/4 hrs

    1. Cucumbers-peeled (if desired-I don't like the bitter taste the peel has) slice thick or thin your preference.
    2. onion sliced thick or thin your preference into rings and rings separated.
    3. Place onion rings in very cold water for a few minutes then drain very well.
    4. Meanwhile mix in a nice serving bowl all remaining ingredients tasting and seasoning or adding more mayo if to thin.
    5. Tasting and adding what is needed for your taste.

    Fold in the onions now let sit in the refrigerator for about 2-4 hours. It will become watery in the fridge, so a quick folding with spatula before serving will mix everything back together.

    Mozzarella Topped Grilled Tomatoes

    Prep. time: 10 minutes

    Total time: 25 minutes

     

    Ingrediantes:

    2-3 Tomatoes

    2 tbl. Olive Oil

    Mozzarella Cheese

    Bacon Bits

    1 tsp. Dried Oregano

    1 tsp. Dried Basil

     

    Slice tomatoes about 1/4 inch thick. Brush with olive oil. Sprinkle with dried oregano and basil (use fresh if you have it). Place tomatoes on the top rack or outer edges of grill while cooking your beef or chicken. Grill for 15 minutes. Place mozzarella cheese on top and sprinkle with bacon bits. Allow cheese to melt. Remove from grill & enjoy!

    Squash Cassrole

    • 1 lb cooked squash (and/or zucchini), mashed
    • 5 diced spring onions
    • 1 cup sharp cheddar cheese, grated
    • 1/4 cup butter (I don't use as much butter)
    • 2 eggs, separated
    • 1/2 cup milk
    • 8 -10 crackers, finely crumbled
    • salt & pepper

     

    • Directions:

    Prep Time: 20 mins

    Total Time: 50 mins

    1. Cook squash and onion until tender; drain.
    2. Mash until fine.
    3. Add salt, pepper, cheese, butter, egg yolks, milk and crackers.
    4. Fold in stiffly beaten egg whites.
    5. Pour into buttered casserole; bake at 350 degrees, until brown and firm (about 30 minutes).
    6. Serve hot.

  • Squash and zucchini are easy to get creative w/ - one of my favorite summer dishes is to slice them into spears or coins, marinate them in Italian dressing, and then grill them. My mom used some fresh from the garden the other night and sauteed them in a bit of olive oil, garlic, and tomatoes, and that was delicious, too.

  • I really like veggie skewers in the summer- cut zucchini, bell peppers, onion, mushrooms, and/or cherry tomatoes, toss in a bowl with olive oil/salt/pepper, skewer and grill.

    And one of my favorites will always been creamed spinach, yum!

  • This is one of my favorites!

    Caramelized-Cumin-Roasted-Carrot
    Nonstick vegetable oil spray
    12 medium to large carrots, peeled, cut on diagonal into 1/2-inch-thick pieces
    2 tablespoons extra-virgin olive oil
    1 1/2 teaspoons cumin seeds
    2 teaspoons coarse kosher salt

    Preheat oven to 400?F. Spray large rimmed baking sheet with nonstick spray.

    Combine carrots and all remaining ingredients in large bowl; toss to coat. Spread in single layer on prepared baking sheet. Roast carrots until tender and lightly caramelized, turning carrots over once, 35 to 40 minutes.

  • roasted brussel sprouts

    green beans with tomatoes & oregano   My recipe at home says you can use fresh tomatoes and it also uses real onion (1 small chopped)

    green beans with aioli (basically steam the green beans and mix with aioli - mayo with finely chopped garlic, though it tastes better if you use a mortar & pestle)You can make the mayo fresh or use store-bought.

    Carrots cooked with butter, honey & oj (this recipe is light and omits the butter)

  • What about risotto or rice with grilled veggies in it? 

    I also am a HUGE fan of tomato and mozzarella salad with fresh basil.  I just alternate slices of each and top with basil, drizzle EVOO over it all and add a dash of kosher salt.  Delish.  Bonus if the tomato is grilled first.

    Corn salad is fun too and has a little more "umph" than just regular veggies.  Grill the corn and then cut it off the cob.  Toss in a little vinegrette and add some other veggies that you like...I use grilled bell peppers, grilled onions and grilled carrots.

    Instead of veggies, you can also grill peaches, mango or pineapple...delish!  They  all make good side dishes too.

     I grill anything.  Stick out tongue

  • We've been trying out some new veggie side dishes because of our CSA. So far we've tried and liked roasted beets, roasted kohlrabi and sauteed radishes. We've also sauteed some of the beet greens and made some kale chips.
