I am all out of ideas for what to make for dinners. I do not like cooking all that much and am NOT a food explorer by any means...I guess I'm very much a meat and potatoes kind of girl. I need some new ideas for easy dinners for 2. Fish is out of the question... any good chicken salad recipes? Something easy with ground beef or chicken breast? Light pasta salads? HELP!!!

Taco SoupIf you re-warm it add a little bit of water to it if it needs it.
we make 2 chicken breasts on the grill with salt and pepper.
take tortilla shells, slice the chicken put in tortilla, then make either a quick greek salad or a bag cesar salad and throw it in the tortillas.
fast, easy, cool for the hot days.

Chicken enchilada casserole - very quick for a weeknight if you cook the chicken ahead on a Sunday
Cheesy chicken & rice casserole

Jalapeno cheddar burgers
Steak bites - super quick
Sloppy joes - super quick
Shepherd's Pie
And I definitely recommend making these sweet jalapeno ribs if you have a slow cooker.
Really, really easy and quick ideas:
HEB brand frozen pizza (the extra thin crust ones are our favorite)
Emeril's brand spaghetti sauce
egg sandwiches/anything breakfasty
build your own subs
tacos, taco salad, chicken tacos
I always rely on MyRecipes.com. They compile recipes from Cooking Light, Southern Living, etc. You can really narrow things down for a specific search.
Yesterday they had a poppyseed chicken salad recipe that looked really good. Also, you can set up a "recipe file" and save ones you like.
What about pork? We love to marinate & grill a pork tenderloin, then serve it with almost anything. If you're not willing to go out of the box, you can always find bottled marinades relatively cheap, but making them is pretty easy as well.

The What's Cooking board does a daily blog post update - every links their recent posts. I check it every day just to see if something looks good. Almost all of them include photos.
