dinner menu ideas HELP!!

I am all out of ideas for what to make for dinners. I do not like cooking all that much and am NOT a food explorer by any means...I guess I'm very much a meat and potatoes kind of girl. I need some new ideas for easy dinners for 2. Fish is out of the question... any good chicken salad recipes? Something easy with ground beef or chicken breast? Light pasta salads? HELP!!!

Go to epicurious and search for chicken with tomato herb pan sauce. Very basic ingredients, very easy, mug makes a pretty meal. You could serve it with pasta or rice.

i cant promise you anything healthy but some of my go to meals are:

Ground Beef (or turkey)

Chicken

Taco Soup

1-2 lbs ground beef or turkey

2 cans of hominy (or corn)

2 cans red kidney beans

1 can diced tomatoes

1 can rotel

1 pkg ranch dressing seasoning (dry)

1 pkg taco seasoning

Cook the beef or turkey until done. Drain. Place in crock pot. Add all other ingredients (liquids from cans and all). Stir and set on low for 5 hrs or high for 4....or until hot all the way through.

If you cook it on the stove follow same directions cook it in a stock pot and bring it to a boil and then reduce to a simmer for 20 minutes or until hot.

top with cheese, sour cream, avocados, chips.... yum!

If you re-warm it add a little bit of water to it if it needs it.

we make 2 chicken breasts on the grill with salt and pepper.

take tortilla shells, slice the chicken put in tortilla, then make either a quick greek salad or a bag cesar salad and throw it in the tortillas.

fast, easy, cool for the hot days.

I recently made this pesto chicken salad and it was really good and easy:

1/2 cup low-fat mayonnaise
1/3 cup plain fat-free yogurt
1/3 cup commercial pesto (such as Buitoni)
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon black pepper
4 cups cubed skinless, boneless rotisserie chicken breast
1 cup diced celery
1/3 cup chopped walnuts, toasted
1 (1-pound) focaccia bread, cut in half horizontally, toasted, and cut into 20 slices
1 (12-ounce) bottle roasted red bell peppers, drained and chopped
10 romaine lettuce leaves

Preparation

Combine first 6 ingredients in a large bowl, stirring with a whisk. Stir in chicken, celery, and walnuts.
Spread 1/2 cup of salad onto each of 10 bread slices. Top each serving with about 2 tablespoons bell pepper, 1 lettuce leaf, and one bread slice.

And I definitely recommend making these sweet jalapeno ribs if you have a slow cooker.

Really, really easy and quick ideas:
HEB brand frozen pizza (the extra thin crust ones are our favorite)
Emeril's brand spaghetti sauce
egg sandwiches/anything breakfasty
build your own subs
tacos, taco salad, chicken tacos

I always rely on MyRecipes.com. They compile recipes from Cooking Light, Southern Living, etc. You can really narrow things down for a specific search.

Yesterday they had a poppyseed chicken salad recipe that looked really good. Also, you can set up a "recipe file" and save ones you like.

What about pork? We love to marinate & grill a pork tenderloin, then serve it with almost anything. If you're not willing to go out of the box, you can always find bottled marinades relatively cheap, but making them is pretty easy as well.

ETA: here is a link to my cooking blog. Most of the things are pretty easy, as I don't have a lot of time to cook.

The What's Cooking board does a daily blog post update - every links their recent posts. I check it every day just to see if something looks good. Almost all of them include photos.
