Kate, other cooking wizzes...

Do you think I could use fat free half and half in place of the whipping cream in this recipe? I can't bring myself to use heavy whipping cream!

Re: Kate, other cooking wizzes...

  • I would do 1/2 c. fat free milk, 1 T. cornstarch and 1/2 T. flour whisked together in it's place. That's what I generally use when I don't want to buy it - it won't work in baking recipes, but I'm fairly certain it would be fine here.

If you already have the half and half, that should be fine.

  • Even better thanks! Then I don't have to go to the store at all for this recipe. I don't have the half and half, but I do have milk, cornstarch and flour..I knew I could count on you!

  • I'm the queen of forgetting something and having to make substitutions.

It looks good - let me know how it comes out!

  • I think the milk with cornstarch and flour is a great idea!  Good job Kate, I would have never thought of that.

My MIL has tons of recipes with heavy cream, but it does thicken up quite nicely on its own when boiled.  I don't know if half-and-half would thicken the same way for the sauce.
