healthyish meals to freeze ahead
I need to get back in the swing of eating healthy again. My mom and I are going to join WW (again
). My downfall is dinner. I can eat great throughout the day at work, but once I pick up Olivia and we start playing, time runs away from me. It's hard to cook a good healthy meal before DH gets home. If I waited to cook until he gets home, we'd eat too late.
So I am looking for some meals that I can make ahead, and freeze until I need them. Any ideas?

I made almost all of these freezer meals before DS2 arrived. There was not one that we didn't like and we LOVED most of them. I'm hooked on freezer meals!
Check out http://onceamonthmom.com/ site as well. It's more organized, but we didn't think the meals tasted as good as Joelen's. OAMM does have shopping lists and gives an order for prep.

The first time I did this I was 9 months pregnant and my stamina was lacking. It took DH and I four hours a day for three days to complete 30+ entrees from the first link.
The second time, I did the OAMM and it only took me two days, by myself. I had a lot more energy and I wasn't pregnant.
When I do it again I plan on it taking about two days and four hours each day.
