recipe for chicken split breasts?

I have two frozen split chicken breasts (with skin and bone). I want to use them before they go bad, so I'm defrosting them in the fridge.

Anyone have a favorite recipe to share? I have no idea what to do with them (DH bought them on sale a few weeks ago) :) I'm not handy on the grill, so preferred method of cooking is stovetop/baking/broiling with the oven...

  • Simmer in chicken broth (water would work if you don't have CB), rosemary, garlic.  When done, take out chicken and deskin/debone.  Shred chicken and make enchildas, tacos, etc.

    Yum!

  • I like them simple... I just bake them with salt and pepper.  The key is to not overbake...  I stick them in the oven at 400 for around 45 minutes or so (just until the juices are clear).  I cover them with foil for the first 30 min, and uncover for the last 15.

    this. sometimes I broil them, right at the end, bc I love the crispy (yes, and fatty) skin.

    You could also throw them in a crockpot with a (medium-sized) jar of salsa, and cook on low for at least 8 hours (more, if they are thick). Then shred the meat off the bones for tacos, etc.

  • You can always cut the meat off the bones and use it for soup, stir-fry, whatever you would normally use chunked chicken for.
