Recipe Rave - Fried Boneless Chicken Breasts
Our oven died last week, so I have been doing much more stove top cooking. Last night I tried this fried chicken recipe, not the healthiest I'm sure, but it was a treat. Both hubz and I LOVED it.
The only changes I made were I used extra flour, which I seasoned with S&P, roasted garlic powder, and some ground red chili flakes. Then I dipped the chicken in that flour, then the egg, and then the coating.
So good!

If you want to try something even better - try butterflying the chicken breasts, flattening them a bit with a meat hammer, and *then* breading and frying. Yum.
Also can be done with thin cut pork chops.
We make something similar to the recipe linked. I just use a mixture of flour, breadcrumbs, salt, pepper, garlic powder, parsley flakes, and a little chicken boullion powder. Mmmm...
